All the goodness of a potato is located just under the skin.
I now mash potatoes with their skin on, it's a Newfie things, so I'm told.

Well since you can't vote multiple times here are my choices:
I leave the peel on sometimes,
I take the peel off other times,
But I very rarely peel potatoes (wife doesn't allow me in the kitchen!)

I use a peeler...one with the pointed end for digging the eyes out.

When I peel it is with a knife most of the time. I use a peeler on carrots!
