Gauge(s) sensor placment

Ok, I've searched and searched and read read and still do not complety understand....some of us it just takes more pounding than others.....I've got a 01 F350 7.3 dually. Pyro I've got, Boost I've got, Trans. temp I've got (understand that is).

I want Oil Temp, Oil Temp and Water Temp.
OIL...
I stoped by the local ford shop "stealership" as I've seen it called... and here is where he told me to tap into.....Oil Temp and Oil Psi, just in front of the fuel filter under the Powerstroke Plastic cover??? I have read here to use ONE of the removable 1/8" NPT plugs at my stock screw on oil filter head, OK BUT WHICH ONE? I hear they have been used for single by-pass filter and one is outlet and one is return...this sounds more likley to be used instead of the location in front of the fuel filter....your sugesstions, seems like to me the less that I can mess with that is all ready installed the better off I will be! Anything wrong with putting both temp and psi on the same tee fitting?
WATER Temp...
again local shop pointed me to the sensor that is just to the passenger side of the thermostat housing, or what appeared to me to be the thermostat...lower end of upper radiator hose...again here I've heard of a 1/8"NPT plug on the driver side of the water pump..actually just went and looked at this, it is on driver side of thermostat housing just below the thermostat...a drain or something, what would be wrong here, is it going to effect or hit the thermostat?

WHERE DID YOU GUYS PUT OIL TEMP, OIL PSI AND WATER TEMP SENSORS

OK, ,just one more. Would I be wasting my hard earned money if I was to put two Pryo's on, one to monotor each side of the engine...anyone's thought process on this.....
