sanitize, what does it mean?

I do know that in the food-service industry, 'sanitize' has a different meaning from 'sterilize'. Sterilization is to remove all microbes and is a much more involved or time-consuming process (more common in the medicinal practices). It's also not required for food service. Sanitizing is about following a specific process that has been determined to remove MOST of the microbes, such as soaking in a solution containing chlorine of a certain concentration for a certain amount of time.
