one simple way is the bell housing bolt pattern on 351M and 400 are the same as a 460. a 351C has the same as a 302. some of the other guys can give you some more specific details but thats a quick way if the motor is out of the truck.
There is no 400M, it is a plain 400. The only engines with letter designations are the 351's.
Engine Identification:

351C/M/400 335 series: 8 bolts in rectangular valve covers. Timing chain housing is part of block. Thermostat housing on block. Exhaust bolt holes diagonal.
351M/400 335 series: intake is 10.7" wide the 351C is narrow.
The difference between the 351M and 400 is the stroke and is internal. There is no identification from the outside.
Others:
351W/302/5.0L 6 bolts on trapezoidal valve covers. Thermostat housing on intake. Exhaust bolt holes horizontal.
429/460 385 series: 7 bolts in rectangular valve cover
352/360/390/427/428 FE series: Intake goes under valve covers.
another visual check is if the front of the intake sealing edge is higher than the thermostat housing sealing surface than it's a 351m/400, the 351C is the same height
the carb is the easiest way to tell. with the whole 4v intake system & carb.. you need to check the stroke tho like they said. the cleveland has differend heads too, if you check on the inside of them you should be able to tell by the enormous intake valve. i dont know i might be talking out my butt so correct my guys if im wrong, but i think that would be the easiest ways. the 400 i think has a much smaller intake valve than the 351 because it was built in mind of the new emissions era. but again im not sure, if im not corrected i guess its right.

partially right partially wrong, the 351c 4v had huge valve (even bigger than stock 460, and the same valves as 429cj), but not all clevelands are 4v engines the 2v engines have basically the same heads as the 351m/400 (smog bumps excluded, but for visual purposes) the 351c4v heads should have a 4 cast into one of the corners next to the valve cover, the 351c2v should but not always have a 2 cast into the same spot, and the 351m/400 may have a 2 (early models usually 400s) an M, or nothing at all. adn all that is hoping no one changed the heads on the engine at one time or another. so looking for factory 4 barrel setup will only say if it's a 351c4v
BTW aussie 2v closed chamber heads don't have anything cast on the corners, and were actually used on 302 clevelands with 4 barrel intake cast iron (which is one way to run a 4 barrel carb on a 351c 2v engine using a factory manifold)

yep there is such a thing as a 302C it's an austrailian only engine (thus aussie heads), has a 3" stroke instead of the 351s 3.5", and I actually made one to race in the mud drags this last year till I blew it up. if you watch on evilbay, there is a couple of guys that sell the 6.03" long rods for the cleves, and/or the cranks for them.
