F-250 Wheels

I have some old white spoked 16.5 rims on my 2WD '77 F250. Judging by the spare, I'd say the truck came with 8.75-16.5 rubber. But it has 31x10.50-16.5 rubber on it now. I'd guess those are 16.5 x 8 wheels.
I'm wondering about swapping to 16 inch wheels. I started looking into tires, only to find 31x10.50-16.5 is getting scarce. Costco said they could come up with a BFG All Terrain. Les Schwab said no go, but they have some 9.50-16.5 rubber.
The Schwab guy said 16.5's were good for carrying load --- but not good for staying on the rim when low and side loaded at all, not good for staying round, not particularly good for balancing. He said he could sell me 16" wheels for $51 apiece.
I need to do some research on diameters, then decide if I'm going to stay with 31x10.50-16.5 as long as I can, or just go with the flow and get 16 inch wheels.
Any suggestions are appreciated. I'm not rich, don't particularly love wide tires (especially with winter coming on), and don't want to give up much ground clearance.
