I don't think you'll find many shops that will balk at REPLACEMENT of a catalytic converter. It just tends to be more difficult to find a place that will remove and not replace the catalytic converter.
If the truck is really nice and very important to you, I'd say go with the High-Flow replacement cat if you're doing the exhaust. If its just a beater or something simliar...find a place that will run a pipe in for you.
Are they bad right now? If they are still good...there's not a lot of reason to change them yet, anyways.
i have an 87 b2 4x4 with a new exhuast what i did was take out the cats both of them and run pipe from the manifolds to the the new muffler being a flowmaster delta flow 40 series and from there since it's a 3inch in and 2.5 out dual i sized the dual pipes down abit boom ready to go one thing though it's loud very loud i can make car alarms go off go for the straight pipes if you like with out cats that's my take on that
