Carb Problems

I have a 69 Ford with a 360 and a mild cam, and a 2100carb (I think) w/ manual choke. It runs perfectly fine except when I am taking off from a dead stop. When you go to take off it wants to die so i have to feather the throttle to get started but once it gets going it runs good. Also, the other day when i was driving it, i was going about 5 - 10 mph and i stomped it and the engine acted like i didnt even hit the gas for about a second and then it kicked in and took off. Any ideas what could be causing this? Also, the engine has been rebuilt with only a couple hundred miles on it and lately it doesnt seem to have as much power as it did before but I could just be imagining this. I thought maybe that would have something to do with the carb too. Any help would be appreciated. Thanks guys
