I have a "91 F250 with a 7.3L. If I let off the throttle quickly it dies. If I can let go of it slow enough it doesn't. It always starts back up immediately. Any ideas?

firewolf ... try changing the fuel filter first and make sure all the seals are in place. If that dont work try looking over the electrical system and make sure there isnt a wire chaffing around the injection pump or the connections on the pump are tight. Get back with your findings.
Mine does the same thing every other year or so. It is easily fixed by turning up the idle screw. It is adjustable on these older diesels. They usually will back off slightly over time due to vibration. There are other possible causes but more than likely it's just the idle.
