I have a similiar setup. '04 F250 6.0 PSD with 37's on 17's. I regeared to 4.56's. I raised my RPM range by approximately 500 RPM. It rarely searches for the passing gear. The truck motors right along in overdrive everywhere I go and if I really stomp it, it goes into passing gear. I personally think it is a "tad" too low for daily driving. I am planning to go with 39's once these 37's wear out, which should put me @ the RPM I want to be. LONG STORY SHORT.......................4.56's are a good choice, ESPECIALLY if you want to tow ANYTHING!!!!!! Just my opinion.

I'll be a little different and recommend 4.10-4.30s with the 7.3 PSD. 4.30s would be close to the same effective gear ratio with 37s at a stock truck with 31.6" tires and 3.73s would be.
