Lots of different places sell them. I bought a small book of just wiring diagrams from LMC trucks. Their stuff is good quality. Then of course you could always pick up a set of shop manuals, which can be very useful for many other reasons besides electrical!
If you have a specific wiring question, I am sure you can probably get it answered here at this foum. There is a lot of expirience represented within the membership!

wiring diagrams
There is an on-line store on e-bay. Just type "66 ford truck" in the search block and you will see the item show up. Relatively inexpensive. I have a 66 ford f-100 but I believe the 250 is included.
