It all depends on what you are going to do with the truck. If you want to haul heavy loads, I'd go with the 4 speed. If it's just going to be a cruiser, you could stick with the 3 speed.
The only one I've heard of is from Vintage Air. They can make A/C's for any vehicle but they cost an arm and both legs, and maybe an ear! If you look into a junkyard, you might be able to find everything you need to add A/C from a donor vehicle. It won't be cheap, but it should be cheaper than aftermarket.
