I have a 1985 F-150 with a 300, stock radiator (in fact it has a couple passes crimped off), and no fan shroud.
Even after my truck has been running for over an hour, the water temperature is only 100-120 degrees (check with a thermometer in the rad). It's so cold it won't even register on my aftermarket temp gauge(in the block) and I can go out and grab the upper radiator hose and it's comfortable to hold onto. Pulled the thermostat and it does the same thing.
What are some causes of overcooling so severe that i can barely get a 30 degree rise from ambient? Unless the thermostat was stuck open so in effect removing it did nothing, but i think i'd still get more than a 30 degree rise if everything else was copasetic
I have an 87 that does the same thing. It gets pretty cold in the winter with no heat in the truck. I changed the thermostat flussed the system replaced the antifreeze w/ new. Still no luck. I have no idea . Good luck though
