You would have a tough time fitting the 5.0 liter in the first generation explorer. The 4.0 liter is so tight it's difficult to get you hands in front of the engine to do maintenance.
My 91 4.0 5 speed (with 181K) will still spin the tires on takeoff and even shifting to 2nd. Unless I were into towing a lot, I wouldn't considers changing to the 5.0 liter.
My 91 4.0 gets about 17 mpg overall. My 98 5.0 liter gets about 14 local and 16.5 highway.
I own a '91 XLT with 6 cyl 4.0 liter. My brother has a '96 EB with V8. The stock V8 doesn't make a significant performance improvement. Adding a performance chip, performance exhaust headers, should make a difference.
