So I have this new (to me) truck that I am just loving! Would like to do some things and I figure the best thing to start with is getting to know my truck.
I figure the best thing to do is get a list of its specifications and such. Maybe you can help.

I'd go to one of the local parts stores (Advance, Autozone, NAPA etc.) and pick up a manual on your truck. Plenty of good information and not that expensive.
It is probly a 5.0 liter aka 302 or the 351W which is a 5.8 liter. It will say either 5.0 or 5.8 on the intake plenum you cannot miss it. The towing capacities will be in the owners manual if you have it I believe it is like 6500#s. As far as the gears go you either have a 3.55 or a 3.73 in it.
Look on the VIN sticker on the driver's side door frame. On there you will find the axle, engine and trans codes. Look those codes up in the 'tech articles' section of this website to learn more about your truck .
