Engine building 101! i need help

I am new to the V8 world so i need help. I have built many motors but they have been aircooled. So here i go i want to bore my stock 302 motor over to 30, 40, or 60 but which one? I want something that will be reliable and have enough power to have some serious fun with. I will run afr 165cc heads, (or is there someting just as good for less but need to be light weight) Edelbrock intake and carb (what size carb). It will be on the back of a vw dunebuggy so weight is an issue. Does anyone know of a good dizzy that can handle lots of water and abuse, maybe a msd or something of that nature. And does anyone knoe where i can get a set of headers that go up and out? Thanks for any info. of recomendations.

As far as overbores, do the bare minimum it takes to clean up the walls. Have a sonic test done if you really want to be sure. Looks like a really wild ride.
