Has it always done this? Is it an auto or manual trans? Does it do it in every gear? What carb do you have?
Like Torque said, check the accelerator pump spray - should be even continuous streams with steady throttle movement (always do this with the engine off). Also check the timing and the vacuum advance.

A oversized carb can cause a flat spot "out of the hole" or off an idle. You would be able to hear the motor bog, if you floored it, and then the motor would pick up and you would have great top end. This is typical for 5 liter motors with a 750CFM carb and a 1" spacer plate or larger. The further the carb is spaced the worse the throttle response.
