i am in the process of rebuilding my first carb which is the holley 600 on my 79 ford stepside i was wondering if holley 600's are able to make performance or should i upgrade to a 750 or a 950? any help most appreciative and thanks in advance.

One of the most comon mistakes people make is to over carburate.
If you are not running a 460 with a healthy cam and dove heads or a modified with c 4v heads or something like that stay with the 600.
It is plenty of carburator for a stock 351 or 400 especially in a truck application.
Thats just my opinion anyway for what its worth......
right now i have a 351M with stock manifolds which i plan on replacing with some hooker headers, and as far as heads go im not sure which would be go and for cam i dont know much about it the guy told me it had a 500 lift if that helps any, and for last but not least it has 77,890 original miles on it and never been rebuilt
i also have another question would my 351M be worth making performance? because i am gonna be quite honest it sure it one clean lookin motor and starts on the dime without hesitation

The 600 on an Edelbrock Performer manifold will work fine. Add some headers and a 2-1/4" dual exhaust system with either s set of good turbo mufflers or a set of Flowmasters.

You should look into a set of aussie cleavland heads they are cuenched chambers with 2v ports They are excellent for truck motors.
Also the 351m is by no means a "performance motor" but they are dependable and produce gobs of torque when set up right.
They are really good truck engines and prepared properly will make plenty of power
