AC Compressor Problem
The AC Compressor in my sons 1994 ranger has a problem, when the AC or Defroster is turned on (which engages the compressor) the compressor tries to engage and spin, but doesn't spin (clutch problem?) which causes the belt to drag on it and smoke. I've disconnected the control cable/power connector to the compressor so it doesn't turn on now when the Defroster or AC is selected, but my question is, is this something that can easily be fixed (by taking apart the compressor maybe and freeing it up) or is this a situation where the entire unit would have to be replaced?

Unless you have a way of recovering any refrigerant, I would suggest to you to take it in to someone who can. Dismantling a compressor without the proper precautions will quickly and effectively deplete your charge of refrigerant.
That said, your comressor will probably have to be changed out. Get the system evacuated before you swap it out.
