If mileage is exempt on my F-150 and I got a new gauge cluster how would I go about setting the mileage back on 0. That way it'd be easier to keep track of after its full restoration.

This is illegal. Do not tamper with your odometer. The more miles a ford truck shows, the better. Unfortunately, they only show 100G.
Simply make a note of your mileage and count how many times you can roll it over.

it is illegal to do but is easy to change. If you take an old spedo cable (inside) that goes on the cluster side and chuck it up in a drill an air drill would be the fastest and start running it forward you will get back to 0. Only forward will work reverse wont work. also you might want to wright the old milage down and if you ever sell it you can turn it forward (add old to new for a current reading)
You might want to consider putting a small aluminum plate on the door by the VIN or under the dash with the original mileage, date, and the reason for the reset. When you replace the cluster it will change the miles anyway since you are putting in a new speedo. It just may make it more official looking and prove that you are not trying to be dishonest.
