Rear End Ratio

I have a 67 ford pickup short wheel base truck. It has been converted to a 351w engine with a t18 transmission behind it. I have a 4 speed toploader transmission that will be going in shortly. The t18 just isnt cutting it, but thats beside the point. I would like to run a 3.00 rear end ratio since I have tires with a 28.88 outside diamater. The 3.00 ratio will give me the crusing rpms I am looking for. My question is, is a 3.00 ratio a good choice for this truck? These trucks arent light and with a 4 speed in there im worried it might be a little sluggish starting off and not spool up very quickly. Im just wondering if anyone out there runs 3.00 gears in there truck? If you do I would love to know how they do. I don't drag race this truck, so i dont need 3.73 gears. But i dont want it to be sluggish either. By the way the 351 is around 350hp.

Mine is supposed to have 3.00 gears in it, at least that's what I've been told (code is 02). Haven't gotten around to jacking it up and checking though. It flies pretty good down the freeway, and has no problem hauling 1k lbs+.
