The 3.55s require fewer revs of the engine to get the wheels to turn 1 rev., and as a result will get better mileage when cruising down the highway. But the 3.55s may not get the best mileage when heavily loaded or towing a heavy trailer as they don't provide enough power for the load and you need to run in a lower gear.
Typically the higher gears offer better fuel mileage. In this case the 3.55's are the higher gear. With your 7.3L doing the work...you should have pretty good mileage. However, if you are using your truck to pull large heavy loads...the 4.10's might work better...but kill the mileage.
