I'm not sure it can be completely disconnected, but if you check your owners manual there's a rather complicated procedure in there to turn off the "Belt Minder" feature that causes the beeper to go off ever few minutes. It involves hooking and unhooking the seat belt a few times and turning the ignition on and off I believe. Just follow the steps and you should be beeper free.
[updated:LAST EDITED ON 13-Nov-02 AT 09:47 PM (EST)]If you are talking about the "BeltMinder" feature, where the chime sounds for 6 seconds every 30 seconds for the first 5 minutes (geez that sounds confusing), See page 103 of the Owner's Guide on how to disable it. I did and have not missed it a bit! I also disabled the annoying AutoLock feature (see page 88). Good luck, the directions are a bit tricky and involve a live chicken. :-)
I had also done the "unplug under the seat" - I think that messes up the airbag stuff - so instead, I plugged it back in, and used the procedure in the manual.
btw, it's page 107 and 108 (at least for the 2002 manual)..

Now wait a minute... I have a 2002 manual and it is page 103. Either you have extra pages or I got shorted. Are there different versions of the manual?
