Don't Get me wrong I like Android Auto. However, I don't always like it automatically coming on every time I start the truck. Besides turning it off, is there a way to override it when I get in the truck? Maybe a setting on the phone or android auto itself.
If it's like CarPlay, it's automatic and I haven't found a way to have it not connect right away. That said, I don't use the radio anymore (I hate commercials and talk shows) and while I have an iPhone the maps are still better than the factory nav. Everything else is some form of settings that I wouldn't need once I have things the way I want them.
I thought there was an auto connect setting that could be changed. That, or a "last used" setting. On mine, I notice how it wants to default to Pandora most of the time and I have to switch it back to YouTube Music when using AA.
On the truck, go to settings and then phone. There should be three buttons next to your phones name. Select the first two buttons. That should allow you to use your phone for calls and stream other audio vis Bluetooth. I also do not like CarPlay starting all the time. This is how I leave mine unless I need to find something that Fords Nav can’t find.

You can still play the radio with AA connected. Just press the audio button on the bottom left of the screen below the AA display area, tap source, and then FM.
Android Auto is not all or nothing - you can switch audio sources between radio, XM, Android Auto, etc.
By default, AA startup behavior is controlled by the truck's side. You can override with these settings on the phone - but really there should be no reason to based on what it sounds like you want to do.
BTW, disabling Bluetooth is not a manually viable option since wireless AA uses a local Wifi hotspot, not Bluetooth. Disable Wifi would have the kill switch effect that was intended.

That's got to be a setting on your phone, but if you're using an Android I can't help you for sure what it would be. My iPhone can be opened any time while connected to CarPlay. I believe there is a setting in CarPlay on my phone to make the phone locked, so perhaps it is under Android Auto on your phone.

Android Auto does not do this either. I can open my phone anytime its connected to any of my vehicles. More than likely it is a mode the phone goes into when its connected to the vehicle to prevent distracted driving?

This very well could be - Apple calls them a 'focus,' and one is for driving. I don't know if it locks the phone screen but it can be configured to silence all calls and messages (it turned on with one of the iOS updates and I had to turn it back off).
