My problem is that there are only 3 or 4 dealers for these fifthwheelers in Germany. We went to the first one today and all he wanted to do was sell, the advice was zero. My wife wants a large kitchen area as we want to live in it for a longer time. I think for my 2006 F350, 30ft / 10m length is the maximum that makes sense considering the weight

Yeah, you will have that with dealers, seems to be an international rule that 'new item' dealers will try to oversell and won't really take into account most things you say, with few exceptions. We were debating a fifth wheel some time back when I had my Power Wagon, I was explicit in telling them that we needed to stay in the 'half ton towable' range and that even then I'd be picky...and the salesman took us to a front-living fifth wheel. I glanced at the pin weight and informed him I wasn't in the market for a new truck too (most front living fifth wheels are so pin-heavy you need a dually, and the Power Wagon has the payload of a half-ton truck). Needless to say after about 20 minutes we excused ourselves and left, and didn't bother looking anymore.
Oh, and yeah, their used rigs seem to ALWAYS be in poor condition. I have not found a used one in good shape on a dealer lot (though I have on consignment lots), and even a lot of private seller units are in poor condition. I came across one where they had extension cords run all over the camper, and asked why...and he abruptly changed the subject. Never did get an answer.
For US-made units, I suggest pre-COVID used units. The quality of most RVs went down the tubes with COVID. Not saying they are guaranteed to be bad, just you'll want to be very careful looking at anything COVID or later.
