The Apple music eco-system starts with "iTunes" software, that gets installed on a Mac or PC. (You don't have iTunes on your phone, you have an app called Apple Music). iTunes software lets you buy or rip music, store it somewhere on your Mac or PC, organize it however you like, and play the music on your computer. It also allows you to copy (sync) your music onto other Apple devices like an iPod, iPad or iPhone. So, the music on your iPod actually got there from iTunes.
