Replacing Valves

I am having my heads reconditioned on my Ford 360. As well as replacing the valves, are there any recommendations on what I should get? Should I trust the shop I take it and use their valves? Should I take off the valves and springs before I send it in? Is it worth it to have them reconditioned or should I just buy a new set? Any help would be appreciated, thanks.
This is on a 1972 ford f250 with a 4spd

You should just take the heads to the machine shop and let them determine what needs done. The FE's used high quality valves and generally do not need replaced unless the engine has been abused. The shop will most likely replace the guides with bronze wall type. You should replace the valve springs regardless. Also, most FE heads will need resurfaced, and it is also a good time to resurface the exhaust side since most will eventually leak if you don't. Hardened exhaust seats should be a last resort on an FE since the shape of the exhaust port doesn't leave much room to install a new seat.
