I hate to be the bearer of bad news: If you removed the cat and the O2 sensor the engine will always and forever run in open loop, i.e. rich. How that will affect the operation of the other sensors is a question that a Ford engineer might be able to answer. It looks to me like some major analysis of all sensors is required. You better look for some real experts in your neck of the woods. Good luck!
it does sound as if you are running rich. first place I would look is at the o2 sensor then start the process of looking at the egr and then the fuel pressure regulator. if the diaphrams are bad in the regulator it will over supply fuel.
as for the statement you made regarding that the gas petal had to be fully depressed would mean that you are running very rich and by pressing the petal you open the butterflys fully,, allowing more air.
