Probably not easy as a rear-facing white light while driving forward is illegal in many places.
Here’s a cut and paste of the first statute I found on a quick google search. I think this is North Carolina, but most states probably have similar statutes.
It shall be unlawful for any person to willfully drive a motor vehicle in forward motion upon the highways of this State displaying white or clear lights on the rear of said vehicle. The provisions of this section shall not apply to the white light required by G.S. 20-129(d) or so-called backup lights lighted only when said vehicle is in reverse gear or backing. Violation of this section does not constitute negligence per se in any civil action.

I believe you're correct, however if you are just 'popping it on' real quick to make sure things are where you put them most people may not even notice.
Still, as mentioned above, there SHOULD be a button on the dash, usually near the other lighting controls, to turn the cargo lamp on/off from the driver's seat.
I don’t like how it doesn’t stay on very long after shutting the truck up.
People do have to do stuff at night or early am, its a truck with a bed, so it would be nice to have lights on a good 30-60 mins
Then your options are the button in the back of the box if equipped, leave the door open, or the button on the dash. I know you can adjust how long the interior/cargo light stay on somewhat in your settings, but I think the longest is just a few minutes. It has to do with attempting to preserve battery power.
But your question was how to leave it on while driving, so we were pointing that out. While stationary there are ways to make it stay on.

I never noticed it on my 2017 I had, just curious if anyone has found a workaround, something similar to the side mirror spotlights staying on. And as a disclaimer no we aren't going out poaching and I drive slow and my kids stay seated.
