Unhappy Cold engine???

My grandpa called me up and mentioned his check engine light flashed after he is driving for 5-10min from cold startup. Its a '91 F250, 5.0L, slight build, 9:1,etc. I pulled the colds, and it shows 21 and 24( I think thats right) Anyway, it was for coolant temp sensor out of range and low air intake temp. What gives? It has the stock 195deg thermostat. The only mod to the cooling system is I install a radiator from a F350 with a 460 ( about twice as thick as the stock one) and the air intake tube from the 460 to improve the inlet air flow. How do I fix these??? I borrowed the truck for a few days to watch it, and sure enough the light just flashes on acceleration after about 5 min or so of driving. Let off the gas and it stops. Drive it for 15min and it stops all together.I figure the larger rad is responsible for the low coolant temp, but what about the air intake temp?? Any ideas appreciated. Thanks

Those codes aren't thrown by the temperatures being a couple of degrees lower than the engineers expected - they're thrown if the sensor is sending an out-of-range signal. Test the sensors electrically with a multimeter according to the instructions in the Haynes manual.
