24hrs in the maple syrup, brown sugar, and honey brine. 24hrs hang to dry and cure. 2-1/2 hrs in the smoker at 150° right now. Soaking in the brine Cabinet 1 Cabinet 2 9hrs hanging and fish is translucent. It was clear when I started smoking. Mine is the analog. The digital is so much nicer. Set and forget.
