Well, it's not my biggest priority, but I don't mind spending a bit of time on making the engine look good. I bought the truck, in Spokane, with the aluminum intake and the Holley valve covers. I added the air cleaner to match the valve covers. A few months ago, I had to pull the intake, and go on vacation, so I used that down-time to have them all polished. I painted a few brackets along the way. It's a good example of what a big chunk of polished aluminum looks like.
They've only been polished like this for a couple months, so not much experience in keeping it looking shiny. However I did search some threads on the topic and based on the conversations about possible coatings, etc, my plan is to simply keep them oiled with motor oil. An easy wipe down when dusty, and reapply.
