So I need to replace my torque converter on my 1999 f250 super duty v10 6.8, do i need to remove my transfer case before i drop my tranny? I have never dropped a tranny, is there a sweet spot to put tanny jack? Anything helps

It makes the transmission easier to handle, yes. That's a lot of weight to have hanging off the back of the trans. It's POSSIBLE to do without removing the t-case but I don't recommend it.
As for where to put the trans jack...last one I used was intended to go around the trans pan. Secure it with a strap if you're concerned about it moving.
