Now I can't speak to the 2017 (Yet), but I did delete my 2011 a few years ago before it got traded in.
Fuel Mileage - Maybe a little better driving light (1-3MPG), towing I seemed to get 4-5MPG better if I kept my foot out of it. Biggest problem with mileage is keeping your foot out of it. I think the biggest benefit is no more DEF and you won't have to Regen anymore.
Power gains - I had Shift of the fly (SOTF) tunes, and they were pretty impressive. There were significant power gains, but it depends what you plan to do with the truck. If you are going to delete, you should at least install an EGT monitor to keep track of your exhaust temps. You shouldn't tow heavy on a hot tune.
Problems - I never had any problems with my deleted 11. The only reason my current one isn't is because I'm still in warranty.
My experience was that the 2011 with a 5" exhaust no muffler was still quiet enough on idle, but it could get obnoxious towing depending on the load. If I decide to delete my current one, I will probably install a muffler.
Will a dealer work on a truck that's been deleted?
Some might turn it away, others won't blink an eye. It's not illegal for them to do routine maintenance on a truck that they didn't delete. That's between you and the EPA.
I have 3.55 gears and 285/75R18 all-terrains and I get 20-25mpg highway now. I have to stop to pee and get rid of the pain in my butt before the truck needs to refuel on a trip.
OEM trans and engine tuning minus emissions. It's easily done and hurts nothing. Even my oil comes out a little clearer.
I deleted my 19 a few months ago, and put a 5" straight pipe. Took about 4 hours by myself with no help. Mpg is averaging around 17 and has way more power. I also have a 4" lift with 37x12.5 and trimmed my hair dam, so aerodynamics are not nearly as good as stock.
i'm going to delete mine this fall....(i mean catalytic theft is way up around here)
theyre pretty quiet with just a delete pipe. it also retains the OEM resonator above the axle. I did find a 5" exhaust with a muffler that should help with drone, but i think i'll just run the delete pipe for now since i can get one for like $100 locally.
are you going to do the egr block off plates or just unplug it?
my plan is to run a tow tune 100% of the time with no SOTF. I dont trust myself enough to have those power settings readily available for shenanigans.
Good luck finding both parts and a tuner though, EPA came down really hard on US companies selling and doing. I recommend a Twister if you go 5", straight piped at 60MPH will make your ears bleed. You still get that nice throaty exhaust note, but the drone is gone. It's basically a can with a twisted piece of metal down the middle so no change in back pressure, it just smooths out the exhaust to kill the drone.

that was my problem, finding a good tuner that didn’t triple in price or finding a delete kit that will ship to Alaska

Many variables but all things equal, you pick up at least 1mpg by getting rid of regens. I’m seeing more like 3mpg better on my commute (75 miles round trip in a major city.) No more concerns around DPF, DEF, or EGR systems requiring replacement or maintenance. Oil should stay cleaner with no EGR too…
Biggest downside is potential issue at resale and the exhaust smells. I’m a running a 4” “race pipe” with no muffler and it’s been fine. I have a muffler but haven’t had it welded in yet. It’s louder at idle and in parking garages but there’s not enough drone on the highway to bother me. 80HP tune is significantly more powerful than stock (which already had more than enough power.) The 200 HP tune smokes more and didn’t feel any more powerful to me…
