The 10.5 uses a crush sleeve so there is no ultimate torque value for the pinion nut. You want to see around 20 in lbs of rotational torque with new bearings. Can apparently be as high as 29.
Have a plan for getting that crush sleeve started, they can be a real bear to get them to collapse initially.
I personally only check this with the carrier removed, but if you're truly replacing both pinion bearings you'll have the carrier out anyhow
