Question differential lube

last spring i had my ford dealer replace a bent rear axle on my '97 e-150. afterward, i noticed that there were oil stains on the differential cover. i know they had to open it up and replaced the fluid (off the top of my head i think they charged me something like $90 just for the oil). since i still have oil stains on the cover, i want to check & make sure the fluid level is ok. how do i check it? also, what would the symptoms be of a low level?
thanks.

if you open the plug it the level of fluid should be at the bottom of the hole. I know that they use synthetic in the rear end but 90 bucks still seems a little steep.
