I guess I missed the statement that this truck was only to be used on a ranch. If that is the case, then I assume the speeds are low, so go with lowest gears that are available.

i have a 1989 gmc with a 350 and a 700R4 and I put 4:56s and a Auburn LS diff. I was running 35s at the time…. later 33s. Currently stock tires. 235//75/15 I think 29 inch tall tires. But it’s getting restored.
if you use it for regular road use towing this or that no long distance 4:10s
if it’s a every day driver go to work take this to that highway byway driveway long way you’ll be happy with 3:73s
the 3:73 will give you the option of going from stock 29 to about 33 inch tire. The 4:10s will give yiu a range between 33 and 36 inch tires. This will keep your trans and engine in the happy power bands or as close as possible.
it’s all a give and take with gearing and tire combos.
