It’s about 20 degrees colder here today than Thursday and the gauge registered about 0.20” from last night. Unfortunately my folks only got enough to streak the dust and they live about 7 miles away from me.

We made a marinade with soy sauce, Jim Bean Maple, Brown sugar, Garlic, Shallots and black pepper. Marinated for about six hours. Put on the smoker at 350° for 1.5 hours.

Looks like I might get the Ranger this week. My oldest grandson got his first paycheck and asked if he could loan me the money to buy it. I told him I only need $200, so he is going to loan it to me. Just need to make contact with the truck owner. I hardly ever see him. he works for Comcast as I repair tech and drives all over the city.
We got a couple tenths of an inch Friday night and Saturday morning. Not much, but it's a start.
Was seriously cold and windy (for us) on Sunday. I thought I would BBQ some bacon for breakfast, but the wind was so strong, it blew the bacon off the grill. That is probably bacon abuse somewhere...
Find a Chinese deli which roasts the entire pig. Ask for the center rib section, with the belly meat attached. Then you get the crispy pork skin, the St. Louis rib slab, and all the bacon fat and meat. You also get the short ribs and loin chops on the top end. I do it all the time. Have them cut from just behind the front trotters and pork shoulder. And take off the hams on the rear. You get the best parts, and someone else gets those other pieces. They will be more than happy to sell 1/3 of the pig to you. Depending on your appetite, that could be enough for a week. Make sure that you have good knives for cutting it all up at home.
