Hi I recently purchased a 1984 f150 302L V8.
* When I crank it up I there is a 'air escaping' sound coming from around the brake pedal area. When I press the brake pedal as far as it will go the sound STOPS but engine wants to stall out.
*Also whenever I come to a complete stop (ex. red light) then try to accelerate it hits a dead spot and stalls all the way out but will immediately crank back up and I eventually get going.
Runs great as long as it's a steady ride down road with no stops.
Anyone know what might be causing this to happen?

There is a check valve in the vacuum hose to the brake booster. make sure that is working...next might be replace the brake booster.
If you need to do that, think about the master cylinder too, if you replace that, it will need to be bench bled before you install it, then bleed the brakes.
Brake booster and MC are fairly easy to replace. Did mine in my 86 a few years back.
That hissing noise you hear from around the brake pedal area is a SNAKE!
No really that is a sign of a bad brake booster.
As said replace the booster & master, bench bleed the master before hooking up the brake lines.
If done right you should not need to bleed the system other than wanting to flush out the old nasty brake fluid.
Now once you have that SNAKE taken care of the stalling of the motor may also stop but if not post up here when it dose and what you did with the booster.

Your stalling problem when you press the gas pedal sounds like a bad accelerator pump in the carb. The carb needs a rebuild kit in it. Or buy a new carb.
