I think I want a gas one and I thought I heard the 2005 V-10 had more HP. Also I dont know if they upgraded the 5.4 either.

Plug thread count increased for the '03 model year.
The '05 info you read most likely refers to the pickup getting the 3 valve engines in '05, unfortunately the EX kept the original design 2 valve engines with a little less power then the 3V models.
Get the 6.8 liter! It gets better gas mileage and has more power. With the stock 3.73 gear ratio, the V-8 would have a hard time getting out of its own way. When you make your purchase, come back and we'll help you spend your hard earned money.
Good point, the 5.4 and 6.8 will get the same fuel economy but the 6.8 will have more power than the 5.4.
What is your planned use for this possible future EX?

But I do take issue with your claims about gas mileage. I'm getting 13-15 highway in my 5.4... 6.8 gets nowhere near that. City mileage isn't something we talk about for either engine. Not even sure it's double-digits for either engine.
My advice would be to get the 5.4 if you don't really care about the towing capacity or passing power.
After replacing my muffler with a Flowmaster 50 Series, I got 16 mpg with the 3.73 on the interstate. I haven't calculated, yet, with the headers, tune and 4.56 gears.

If I keep my V10 to 65-70 on the highway with 3.73's and 285/70R16's I can get 13.5. In town I'll get around 8...

I won't get quite 13.5 with my V10, but it's close. And it's tough to maintain that speed. The motor doesn't free up and purr until the Ex tops 80. Allegedly....
'05 EX with 4.88s and 35"s for an effective 4.39 ratio. All highway with CC set at 65 MPH got 14.5 MPG over 490 miles with the AC on about half the time, that was on the 5Star 89 Octane Performance tune. Best tank back when all stock with 3.73s and 31.6" tires was 15.5 MPG. No real in town/city numbers as this is our dedicated tow rig and it sees very limited city driving.
