Currently own a 2004 V10 Ex which is getting up there in miles. An opportunity has come up on a lower mileage 2003 V10, but I think I remember there being some internal differences between the earlier V10's.
Is there a cliff notes version of the pros/cons on these motors?
No internal changes to the 6.8 between those two years that I am aware of. The short plug threads were addressed late '02, maybe very early '03 but most all '03s will have the heads with more threads and the reliability they bring. How many miles on each? Any problems going on with the current '04?

Thanks Tom, much appreciated. That was exactly the info I was looking for. I've had the plug issue on my '04 but found the right guy to fix it and have had no issues since (probably 80k miles since).
Current '04 is at 235k but is looking a bit tired.
'03 I'm looking at is a color I'd love to switch is incredibly clean with records and has "only" 170k.
