he is showing the gap difference from side to side is 5mm which is a problem.
Based on the information at hand, a new caliper mounting bracket is required.
I would try welding up the caliper bracket to decrease the gap to 275mm and re-machine smooth.
The caliper mounting brackets will indeed wear over time...also remanufactured calipers will sometimes have the machined faces touched up reducing the caliper length compounding the issue.
Even if he used a shoe lace (metric or standard), I bet there is a difference in the caliper mount "gap". Do you see the missing pieces (inboard rear?) part of the caliper support key? Or am I wrong?

That's it aside from the tapered shank bolt that holds the spacer bar in place. (Jonathon do you have that bolt?)
Not sure how well the caliper bracket will weld up...if that fails also possible to cut down and bolt a spacer in place to make up the necessary gap. Custom job either way but when you're in south africa you can do a safari hunt while you wait on the machine shop.
Looking at the 1st post, 1st pic of the gap (where the T bar and spring goes in) it looks like the caliper is WAY to short, at the bottom of the caliper and axle mounted caliper bracket area. It is not even touching or compressing the spring.
I am thinking incorrect caliper or he might not have the TOP lip of the brake caliper installed correctly? Here is what I mean on the gap and here is what I mean as far a thinking some of the t bar is missing. Thoughts?
