03 F250 SD 5.4/manual trans. Truck is lifted with 17 inch tires. Stock suspension. Thinking of buying a 5th wheel travel trailer, probably a 30’ or under. I was thinking of installing rails and using a standard 5th wheel hitch, and upgrading to an Anderson hitch later. Ami missing anything?

If you don't get crazy with a heavy 5th wheel you should be ok. Depending on your lift you might have to raise the trailer some.

I would go straight to an under bed rail system and to the Anderson. You will need all the weight savings you can get.

A 30' fifth is likely to approach 10K pounds.
As shown above - you don't have enough truck.

Your truck is suited for pulling a 24' (5k) bumper mount.

Yep, watch the payload and tow rating...pretty cut and dry.

Remember to go through the truck bumper to bumper checking suspension, brakes, rust, etc. At 16 years it needs new brake hoses (if they're original) regardless of miles.

Didn't see mention of yours being 2wd vs 4wd, but with my 4wd i had to "flip" axels on our last 5th wheel to clear the bed, and I'm not lifted. Current 5th height was fine. May have to lose your lift, just be prepared for that possibility
