Thanks for all the feed back y'all. I am seeing what they come back on with the final deal, and I agree the sentiment on needing more pay load down the road, and considering F350. We currently are in a small 20 ft TT that I tow with the F150 no issues, and are looking at some 24 and 26 FT Bumper Pull Bunk House models for the kids. So been running some napkin math here at home to see if I will quickly hit and or exceed what the 250 can do. As for the Gas vs Diesel I want the 6.7... So I think that decision is made.

I was in the same boat as you. My wife started waiting a TT, so she said about getting an F250. So I bought a 2019 Lariat that has the Snowplow package. My Sticker on the door says 2980lb, so minus 1,000lb for passengers, minus 1,100lb for the hitch (Trailer is 11,000), that leaves me 980lbs for gear in the bed. I doubt I will do that because most will go inside the trailer, so I should be good. Also, I'm not doing a 5th wheel, so if you are you would probably need the Heavy Tow Package. We are going with a Grand Design 312BHTS for the kids, so it is one of the bigger tow behinds. So like they said above, look at the sticker.
I ordered the exact truck you're considering + the High Capacity Tow Package, which is the same price as the F350 upgrade. I had extenuating circumstances that prohibited me from getting a 350. My employer pays me a monthly vehicle allowance and gives me a fuel card (way too good a deal to pass up) but will not allow a Class 3 vehicle (DOT requirements) so I did my best to replicate the capability of an F350. Just order the F350! As configured, your truck will have a payload sticker around 1700 pounds. Better to have the capability and the sticker.
