I've never tried the DVD version but I understand the interactive PDF version is just as good and much more portable. I saved mine to Google Drive and it's accessible anywhere I have cell service.

Outside of the aforementioned electrical diagrams, what extra information does the DVD offer over the official Ford Service Manual? I'm genuinely curious for future use.

It depends. I have the single DVD and double DVD versions. I think the single DVD and the PDF might be the same but the double disc one has everything on it.
I had the hard copy manual from Helm for my F-150. I prefer to have things in print that I can thumb through but having everything at my fingertips is very convenient. You can also make a PDF out of any portion of the digital manual to print out or have on hand for easy reference.
