Dailydriver: It is a good recipe to serve guests as a finger type food at a gathering. Put the bread pieces out and just let folks dip like a fondue. A heated chafing dish for serving keeps it warm. [updated:LAST EDITED ON 13-Aug-02 AT 09:00 PM (EST)]brienobrien, you mentioned that "stronger and darker, the better for the flavor", so I thought I'd mention the strongest tasting beer I've ever had. So strong that many take a sip, most can drink half of a bottle, but finishing a bottle is a game few win: Rogue's Shakespeare Stout. I'd bet it would be great in the cheese dip though!
I never thought about cooking with the remaining (over a year old... hmm....) bottles, but now that you mention it... don't really know what else to do with it. The beer, alone, is strong enough that it surpasses the 'acquired taste' of all the stout drinkers I know - and we've had some dandies.
