My 2018 has the Sync 3 with factory Nav. Is there any way to program the factory system to account for trailer size and height while towing like the RV specific Garmin RV 760LMT or similar.? I am assuming no, but was wondering if I have overlooked something in the settings.

No, nothing for rv towing. I use my Garmin as primary, and the factory navigation for use with the travel link info.
I've also got factory navigation. I've found that the factory system is far out of dated. I like my Garmin Nuvi 2789LMT with free life-time updates much better.
I've got the factory nav in my '17 Lariat and find that, in general, it works well but sometimes it just goes out to lunch. Occasionally, it will throw up the No GPS Signal icon on the screen and the only way to get it to go away is to pull over, shut down, open and close the door and restart. Then everything works fine. I've also had several occasions driving in New Jersey where the Nav screen shows me to be in the middle of New York Harbor. Yea, I know, there's a bunch of jokes in there.
It also tried to take me up a dirt fire road in Vermont in order to turn around rather than tell me to make a U turn when safe to do so.
I just wonder how or if this system gets updated. Over the air? During a Sync 3 update? The Nav system I had in my '14 Explorer used an SD card for its database and Ford wanted $169 for an update. I took the money and bought a Garmin.
