Thermostat?

What engine ?

usually no cooler than 180*

The average & by spec is the 195* but a 192* will also work

I like 195*. Too cool a thermostat and your engine want get up to proper operating temperature leading to condensation in your oil in cooler climates.

Thermostat?

I have ran a 205 in my 300-6 for years. I picked up 1 1/2 mpg city driving in the winter when I switched from a 180 and you can't hardly hold your hand over the defroster when she's warmed up.
I did overheat it once when towing a friends extremely heavy 69 American jet boat with 455 olds. That was a 90 degree day.
