Not condoning driving 75 but it does give you a bit of wiggle room.

If one is going to tow a lot......Sailun S637 commercial grade tires have 75 mph speed rating! I have them and put approx. 7000 miles on them last summer and they literally show no wear at all. So far I am very pleased with them. Yes, they are more expensive, but having the higher speed and weight rating gives a much larger margin for safety. I always set my cruise 65-67 mph where speed limit allows, and with three 7000 lb axles under my Raptor I am also well under the weight rating of the tires, and although my tires and wheels are rated for 110 PSI, I run them at 90 with no issues.

Drop the bags down a bit - the truck should be level with load, no need for it be raked - your not gaining ANYTHING with the rake.

A note on Nose up towing -my trailer is also up in the front, though not that much - its probably up 2 or 3 inches. My hitches are all at the lowest setting, its just the setup. Again - it tows fine, BUT! - my (sleeping) bed- which is sideways in the trailer (head towards the passenger side, feet towards driver), is somewhat miserable to sleep in when hitched. All night I feel like I'm going to roll off the sucker.

Also - its weird going up the stairs to the bedroom etc sloped. Showers, also slightly...odd. The Ammonia fridges also stop working about 3 degrees off level per the manufacturer, mine works just fine tho.

Now - why even go to sleep hitched? Well, if your in transit anywhere, and just sleeping in a Walmart or truck stop or rest area etc, you wont want to unhitch. Your just staying for the night, getting some rest, why take the time? It also looks a bit more permanent if your unhitched...

Level is the way to go.

You can also bring a couple of 2x6s to roll up on if you are stopping just for the night. That should get you closer to level without having to unhitch.

What retailer do you use to source the Sailun tires? Can you just go into a local chain and expect to find them fairly easily?

Yeah, it's seems like you would get itred of rolling out of bed with a raked 5th wheel

As someone else said, you can run the fiver up on levelers (Lynx blocks, 2x6, etc). Mine is nose high (no airbags on my F350), so when Walmart camping, I look for the drainage slope of the parking lot and try to park facing downhill.
