Bottom end bearings

so I've got my 360 tore down and it's clearly been rebuilt before and I'm wondering how can I tell if the bearings are done? They don't have any bad groves and the oil pressure was always fine but the copper colour is startig to show.

Once I had it torn down like that, it'd be getting new bearings no matter how they looked and the crank would also be checked.

Old rule of thumb was if the coppers showing they need replacing. Lot of copper showing on the rod side and that is where most rod bearing wear occurs, main bearings wear more on the cap side.
With the bearing wear I see I'd have the block and crank both checked.

With the wear off to one side like that, the block might be due for a line-hone.

Rebuilding an engine is not just replacing the bearings. Depending on the extent of the rebuilt you are doing I would: get all the new bearings for the bottom end - including camshaft. I would turn and polish the crank (balance it also). Get all new piston rings.

Again, depends on what you are doing and how much you want to spend. If your motor is apart do as much as possible.

Depending on your performance level dictates what you need. If just a truck that hauls stuff a normal rering and bearings are fine. But as you up the power things need closer attention.
