I have a 2000 Mazda B4000 4x4 with the 7 in. wide stock alloy 15 in. rims. I recently bought some 8 in. wide 15 in. alloy wheels to use for snow tires that had been on a Jeep. The offset is exactly 1 in. more than the stock wheels, so the outer edge of the new wheels will be the same as stock and the inside edge will be an inch deeper into the wheel well. Will there be any clearance problems with this width and offset? Thanks.

I would suggest that you look at the current tire clearance to see if there is more that one inch clearance on the inside. Be sure to check your steer tires while turned full left and full right. Also take into consideration the width of the new tires when calculating your tire clearance.
